Hope you all are enjoying the first official days of summer! Today I wanted to share one of my new favorite summer drinks, the Lemon Shandy. It’s a combination of lemonade and light beer, which may sound a little odd to some, but I promise it is refreshing and delicious. My boyfriend, James and I first fell in love with Leinenkugel’s Summer Shandy, but it’s a bit pricey to buy at the store so I thought I’d try making my own version.

This recipe turned out great and can be easily adjusted to suit your tastes. The key I think is to make your own lemonade concentrate. That way, you can add as much or as little as you want to your own beer.

Yields 4 cups

Ingredients
  • 10 lemons
  • 2 cups sugar
  • 1½ cups cold water
Instructions
  1. Remove the zest (but not the white pith) from the lemons using a vegetable peeler. (Yes, this is a ridiculous amount of lemon zest).
  2. Juice all the lemons into a saucepan and add in the zest.
  3. Next add the sugar and water and head slowly over medium heat. Stir constantly until the sugar has dissolved. Remove from heat just as it starts to boil.
  4. Pour into a sterilized glass jar and let cool completely. Store in refrigerator until ready to use.

Instructions
  1. Pour your light beer into a pint size glass. Add the lemonade concentrate a few tablespoons at a time until you get your desired citrus flavor.
  2. Garnish with a fresh lemon slice and enjoy!
